Szechuan Black Bean Sauce

This is one of our favourite sauces to experiment with. It is a savory rich sauce with robust flavours that perfectly compliments chicken, beef, pork, seafood, shellfish, vegetables and tofu.
We believe you will find the ease with which our sauce can be used to infuse a series of finishing touches to so many dishes.

Quick Black Bean Touches

Add 2 to 3 tablespoons of Szechuan Black Bean Sauce to marinades, any BBQ or stir fry sauce, soups or stews. This will create an array of earthy background tones, giving your old recipes a new lift. We like to add 1 to 2 teaspoons of our black bean sauce to any vinaigrettes or salad dressings to give a new dimension to our salad greens or vegetables.

Drizzling Sauce or Glaze

We love to preare this sauce ahead of time and use it cold as a BBQ Glaze for ribs or as a topping for mussels. When served warm we drizzle the sauce over chicken, fish, prawns, scallops or stir fry.

Serves 4

  pat of butter
  3 tbsp Szechuan Black Bean Sauce
  3 tbsp wine, sake, vodka, tequila or chicken stock
  1 tsp lemon juice
  1 tsp finely grated lemon rind

Mix over low heat, stir and let cool til needed. Finishing touches: Sprinkle any combination of chopped green onions, sesame seeds, shredded coconut, fresh chopped basil, parsley or cilantro to create the perfect look and taste.
